Sunfire
Sunfire was one of the X-Men recruited by Charles Xavier around the same time as Wolverine, Nightcrawler, Storm and Colossus. Instead of joining the team full-time, he left after the first mission. Things never really went well for him after that, and by the time Apocalypse found him, he had lost his legs and his powers in M-Day, making him desperate enough to become Famine.
Polaris
Things were not going well for Polaris when Apocalypse found her and turned her into Pestilence. After a mental breakdown during her wedding to Havok, the some time daughter of Magneto then regained a semblance of sanity, only to then leave the X-Men to chase a sentient green alien blob known as Doop/Daap, which led her right into the arms of Apocalypse.
Hulk
Surprised to see a non-mutant character on the list? Well You shouldn't be. Apocalypse is all about Survival of the Fittest, and you'd be pressed to come up with a more fit character than the Hulk. He served as War for a stretch, throwing down with heavyweights like the Juggernaut and the Absorbing Man, before regaining control.
