According to several studies in recent years, burnt toast and overcooked potatoes and other starchy foods have been shown to release a chemical which causes cancer. Will this change how you take your hashbrowns?
In 2002, scientists studying mice found that the chemical compound acrylamide caused cancer in the small rodents. Acrylamide is the chemical that is released when sugars in starchy foods such as potatoes and bread are cooked at high temperatures, especially when they are blackened.
Now, over a decade later, the UK's Food Standards Agency has started a new campaign warning people of the dangers of cooking their food in such a way that it releases higher levels of acrylamide. The campaign, "Go For Gold," encourages people to follow these four steps to avoid cancer risk from food...

The FSA is currently simply trying to raise awareness that acrylamide exists and that there are ways to reduce acrylamide intake. According to Donald Mottram, whose team first identified the dangers of acrylamide in 2002, it's fine to continue to eat fried and roasted foods. The important thing is letting color be your guide for cooking.
I still eat crisps and fries ... but what we want to do is prepare these foods so the risks are minimized. Color is a good guide. It's the only guide you have in your home.
