Meat loaf in a mug

INGREDIENTS
-2 tablespoons 2% milk
-1 tablespoon ketchup
-2 tablespoons quick-cooking oats
-1 teaspoon onion soup mix
-1/4 pound lean ground beef
-Additional ketchup, optional

DIRECTIONS
1. In a small bowl, combine the milk, ketchup, oats and soup mix. Crumble beef over mixture and mix well. Pat into a microwave-safe mug or custard cup coated with cooking spray.

2. Cover and microwave on high for 3 minutes or until meat is no longer pink and a thermometer reads 160°; drain.

3. Let stand for 3 minutes. Serve with additional ketchup if desired. Yield: 1 serving.

Mac and Cheese in a mug

INGREDIENTS
-1 cup water
-½ cup elbow macaroni
-½ cup cheeses of choice

DIRECTIONS
1. Put macaroni in a mug and pour in water. (You may want to add more or less water depending on mug size, but there should be more than enough to completely cover noodles).

2. Microwave on high for 8 minutes pausing at the 5 and 2 minute mark to stir and add more water if necessary.

3. Add cheese to pasta mixing with the small amount of water remaining at bottom of mug

4. If cheese does not completely melt, pop mug back in microwave for 30-60 seconds

5. Stir then enjoy!

Salmon

INGREDIENTS
- 1 -1 ½ lb boneless salmon fillets or 1 -1 1⁄2 lb salmon steak
-Your favorite marinade

DIRECTIONS
1. Marinate and/or baste salmon with 1/2 of your favorite marinade.

2. Place fish, skin side down in a shallow microwave-safe dish; cover with plastic wrap.

3. Cook, on high, for 7-8 minutes.

4. Remove dish, uncover and baste with the rest of marinade.

5. Recover and cook on medium for 6-7 minutes.

6. Salmon will come out tender and flaky.

Spaghetti Bolognese

INGREDIENTS
1 lb ground beef or 1 lb Italian sausage
1 teaspoon garlic salt
1 tablespoon dried onion
1 (26 ounce) jar spaghetti sauce, plus
19 1⁄2 ounces jars water
4 ounces mushrooms
1 teaspoon parsley flakes
1 teaspoon oregano
1⁄2 teaspoon dried basil
1⁄2 teaspoon Italian seasoning
1⁄2 teaspoon salt
1⁄4 teaspoon pepper
1⁄4 lb spaghetti, broken into 2 inch pieces (uncooked)
1⁄3 cup Parmesan cheese, grated

DIRECTIONS
1. Crumble ground beef into a microwave-safe casserole; add garlic salt & onion.

2. Microwave on high until no longer pink (about 4 minutes); stirring once.

3. Drain; stir to break meat into smaller pieces.

4. Add tomato sauce, water, mushrooms, remaining seasonings and spaghetti.

5. Cover with casserole lid; microwave for 10-12 minutes or until spaghetti is tender, stirring twice.

6. Let stand 5 minutes, sprinkle with Parmesan cheese and serve.

Lasagne

INGREDIENTS
-12 lasagna noodles, cooked, drained
-2 cups cottage cheese (or ricotta cheese)
-1 1⁄2 cups mozzarella cheese, shredded
-1⁄2 cup Parmesan cheese
-2 eggs
-2 tablespoons parsley, chopped
-1 jar spaghetti sauce
-1 -2 cup mozzarella cheese, shredded, for topping

DIRECTIONS
1. Mix cottage cheese, 1-1/2 cup mozzarella and Parmesan cheese with eggs and parsley.

2. Place one lasagne noodle on work surface.

3. Spread 1/3 cup cheese mixture on noodle evenly.

4. Roll up tightly like a pinwheel.

5. Place seam-side down in microwave-safe baking pan, that has 2 cup of spaghetti sauce in bottom.

6. Continue until with remaining ingredients.

7. Cover rolls with remaining sauce and sprinkle with additional mozzarella cheese.

8. Cover with microwave-safe wrap and microcook on high 10-20 minutes, until cheese is melted.

Kid friendly Brussels sprouts

INGREDIENTS
-8 ounces frozen Brussels sprouts
-2 -3 ounces water
-black pepper, to taste
-4 ounces cheddar cheese, grated

DIRECTIONS
1. Place Brussels sprouts in a medium microwave safe dish with a small amount of water to barely cover the bottom of dish (approx. 2-3 oz).

2. Cover with plastic wrap and microwave on high for 4 minutes (may vary depending on your microwave).

3. Avoid steam burn, sprinkle with pepper if desired and cheese then replace plastic wrap and heat again on high power for another 3 minutes or so until cheese is melted.

4. Serve immediately and enjoy! ;).

Coffee mug quiche

INGREDIENTS
-1 egg
-1 1/2 tablespoons milk
-Salt
-Ground black pepper
-1/4 of a bagel (or similar amount of French bread, etc.)
-2 teaspoons cream cheese
-1/2 slice prosciutto or ham
-Fresh thyme leaves or fresh chopped chives
-Dijon mustard

DIRECTIONS
1. Beat egg and milk together with a fork in a coffee cup, adding salt and pepper to taste.

2. Tear bread into dime-size pieces; stir in. Add cream cheese; stir in.

3. Tear or cut prosciutto into small pieces; add to mixture. Sprinkle with thyme.

4. Microwave on high until done, about 1 minute 10 seconds.

5. Garnish with mustard and fresh thyme or chives.

Donuts

INGREDIENTS
-1/4 cup glutinous rice flour
-1/4 tsp baking powder
-1 tbsp cocoa powder
-2 tbsp sugar
-4 tbsp milk
-1 tbsp oil

DIRECTIONS
1. Combine all ingredients into a mug and mix with a small whisk until batter is smooth.

2. Split batter into two mugs and microwave each separately for about 1 minute, or until cooked.

3. If pouring into donut moulds, you'll have enough to fill two regular-sized donut moulds 2/3 full

4. Cook each separately for about 1 minute. If using smaller molds, adjust time according.

5. Once cooled you can decorate with glaze and/or sprinkles.

Blueberry muffins

INGREDIENTS
-3 tbsp spelt flour (30g) (or whole wheat pastry flour.)
-1/4 tsp baking powder
-heaping 1/16 tsp salt
-1-2 tbsp blueberries (fresh or frozen)
-1/2 tsp vanilla extract
-1 tbsp coconut or veg oil (You can use applesauce if you don't mind the taste of fat-free baked goods)
-1 tbsp plus 1 tsp milk of choice (Use less if using liquid sweetener)
-Pinch uncut stevia OR 1 tbsp sugar or liquid sweetener

DIRECTIONS
1. Mix dry ingredients, then add wet.

2. Mix until just combined (don’t over mix)

3. Just grease/spray a little dish, pour batter in, heat for 90-ish seconds, and enjoy!

Chocolate Lava cake

INGREDIENTS
-1 brownie mix (family size for 33 x 23 x 5 cm pan) plus ingredients needed according to brownie mix instructions (normally oil, water, and eggs)
-1 large egg extra as well as the one required for the brownie mix
-Chocolate
-whipped cream or vanilla ice cream, optional
-raspberries or strawberries for garnish, optional

DIRECTIONS
1. Empty brownie mix into large bowl. Whisk to remove large lumps.

2. Coat 8 cups with cooking spray and add a small amount of dry brownie mix to each cup and rotate cups until completely lightly coated Set aside.

3. In separate bowl, whisk together wet ingredients called for in brownie mix instructions (oil, water, eggs), plus 1 additional egg. Add wet ingredients to brownie mix and stir until well combined.

4. Spoon batter into each cup or bowl until 1/2 full. Stack two Chocolate segments; spoon batter over Chocolate so it is completely covered.

5. Place in microwave and cook at full power for 1 minute for 1 cake (microwave power and times may vary). May cook up to 4 cakes at one time, adding 1/2 minute to cooking time for each additional cake.

Tip: You can remove cake or leave it in the cup. Serve with whipped cream or ice cream; garnish with berries, if desired.

Chocolate chip cookie in a cup

INGREDIENTS
-1 Tablespoon Butter
-1 Tablespoon Granulated White Sugar
-1 Tablespoon of firmly packed Dark Brown Sugar
-3 Drops of Vanilla Extract
-Small Pinch of Kosher Salt
-1 Egg Yolk (discard the egg white or save for different recipe)
-Scant ¼ of All Purpose Flour (slightly less than ¼ of a cup)
-2 heaping tablespoons of Semi Sweet Chocolate Chips

DIRECTIONS
1. Start by melting your butter in the microwave. Butter should just be melted, not boiling.

2. Add sugars, vanilla and salt. Stir to combine.

3. Separate your egg and add the yolk only to your cup. Stir to combine.

4. Add flour, then stir again. Measure a scant, slightly less than full, ¼ cup of all-purpose flour.

5. Add the chocolate chips, and give a final stir. Now your mixture will look like cookie dough.

6. Cook in microwave 40-60 seconds, start checking for doneness at 40 seconds.

7. Serve warm.

Tip: The Cookie batter will continue cooking as it cools. If the cookie is dry or cake like, try less time.
