Cao lầu
This delicious noodle dish is a speciality to Hội An which contains pork, crackling and lime and uses special water from a specific well to create its unique flavour. Sadly you can't access this well from the UK, but below is a delicious recipe to try and recreate this tasty treat.

Bánh Xèo
Bánh Xèo means sizzling cake, aptly named for the loud sound that is make when the rice batter is poured onto a hot skillet. Commonly containing a variety of meats including prawns and pork, this delicacy tastes a bit like a savoury pancake and is hugely delicious.

Bún Bò Huế
This dish is as fun to eat as it is to say. Bún Bò Huế is a salt/sweet/sour soup containing rice vermicelli noodles, beef, vegetables and delicious broth. But just a warning for the less daring eaters among you, it is also often served with cubes of congealed blood (see picture) so don't be surprised if these bob up in your soup.

Bánh Mì Hòa Mã is like a Vietnamese take on a Full English. Served in a hot skillet this breakfast dish consists of meat (often pork) with fried eggs, fresh crispy bread and pickled vegetables. It's best eaten sat on authentic, tiny tables dotted along the edge of the street - but I suppose your kitchen table will do.
