Recipe: Fennel-Infused Honey
1 cup local honey
1 teaspoon fennel seeds or fennel pollen, or to taste
In a small saucepan, combine honey and fennel seeds or pollen. Bring to a simmer and cook 3 minutes. Remove from heat and allow to cool. At this point, the longer you let the honey and fennel sit, the stronger the flavor will be. Taste it periodically to decide when you have the flavor you prefer. Then strain and store at room temperature. Makes: 1 cup
